Paleo Turkey meatballs

Howdy peeps and happy Thursday! I hope you are all staying warn if you are getting slammed with round two of another polar vortex… I don’t know about you but I am SO ready for spring!

I read a bunch of Paleo turkey meatball recipes on line for inspiration and then made this up based on how much time I had and what I had on hand.  It made 22 meatballs ( on the big side ).  Also, I don’t like a lot of “stuff” in my meatballs but you can easily add other things to this like grated carrot, finely chopped peppers, other seasoning, garlic, parm cheese.

3 lb (family  size) ground turkey
1 lb plain ground pork
1/2 sweet onion sautéed in evoo
1 egg
1 tbsp. Italian seasoning
1/2 c almond meal ( approx. 50 plain unroasted, unsalted almonds ground up in my mini chopper – don’t over grind or it will start to turn into nut butter )
salt and pepper to taste
Preheat oven to 400*
shape into balls and place on baking sheet lined with tin foil for easy clean up
Bake 20 minutes.  Test them with a cake tester. If it feels mushy going in, bake for another 5 minutes. (I did an extra 10 minutes and they were slightly dried out)

Over all, we both liked them. Dan said it needed more salt.   I have a tendency to under salt things.  I get that from my mom (and also overcooking things apparently LOL)  Next time, I might add garlic then make them into patties to grill up this summer.  This can also be used as a basic recipe for meatloaf too!
