Meal prep and some Hysteria

Happy Sunday peeps! I hope everyone is staying warm! We had a busy day yesterday. We took Allyson back to college. Luckily the snow we had here in the Northeast on Friday did not cause issues with our 13 hour round trip drive. The roads were clear and dry for the most part. Needless to say, we were exhausted by the time we got home. We get to do it all again in March. I need to remember to take the day after the trip off to rest up. 

Today was a late start. It was great to sleep in a little longer today. We have had unusual cold temps here lately. Although I rarely eat beef, when it’s this cold, I crave beef stew. Dan was on board for it. He mentioned he wanted salad all week for lunch or dinner too. So, meal planning naturally happened. I made a list and we headed to the food store. 
This is what we came up: 
Beef stew (slow cooker)
Roasted chicken cut up into pieces
Roasted butternut squash and Brussel sprouts (cold on salad or heated with chicken) 
Two big bags of chopped up romaine and red leaf lettuce (Dan will have Caesar salads for lunch)
Baked sweet potatoes for my breakfast or in my salads
Red pepper rings for eggs 
Almonds and craisins as salad toppers
Hard boiled eggs (I forgot they were cooking. So I hope they are not over cooked- oops)
Bananas – AM snack
Kind Bars – mid day snack
Besides the crock pot with still has a half hour to go, it only took three hours from start to clean up. I have to say, I am very excited to eat this week! I could not stomach another tuna sandwich for lunch. The best part to prepping the food is now I will have time to workout after work. I know we aren’t going out to dinner so I can get as sweaty as I want 🙂 I love doing yoga when I get up but I do not trust myself to lift heavy weights over my head right after I wake up. So I plan to do yoga in the morning and weights or cardio in the evening. 
I planned on taking our tree down tonight but it can wait. We stumbled upon AXSTV and they are playing Def Leppard.  The concert is of them playing the entire Hysteria album! 

This is one of my favorite albums of all time. How can I possibly not watch?

    Mr. Big Truck and I are taking a stronger approach to the whole meal prep/planning thing. Let's see how this goes.

  2. Seeing this freezing cold temps in Ontario, the only thing I'm looking forward to once I get home later this week is beef stew. No slow cooker; I simmer mine in a big pot on the stove for 5-6 hours. Do your potatoes stay non-mushy? I found the best for leftovers is making the stew without them and serving it over mashed taters.

  3. No adventures for us as we're snowbound due to the midwest blizzard! Sometimes I plan my meals, but I'm so guilty of eating the same things a lot… I need to work on doing better!
