Ok Peeps… do I have a recipe for you! Back in September, I was determined to master homemade, dairy free, pumpkin lattes. I was not very successful in this venture but something totally yummy did come out of it. Pumpkin pie oatmeal! I had measured out tablespoon servings of pumpkin puree and froze them on a cookie sheet then bagged them for use later. (Note: I used plain puree not pie filling which is loaded with other crap.) Because I like this so much, I thought I would share with you fine people.
When I think far enough a head, I will make this as overnight oats (premade but not cooked, in a container and left in the fridge to soak overnight). I think it seems creamier but that could just be my imagination.
