Sweet Potato Muffins – recipe

Last night something came over me. I decided I wanted to bake…This creation was inspired by a couple recipes. It sort of came up by accident.  I was going to attempt my first paleo recipe – Pumpkin muffins…The other was a very involved paleo sweet potato muffin recipe. However, I was not at a big chain food store so I was not able to find almond flour or the almond butter it called for… then I got home and realized I also forgot the pumpkin.  So, I decided to use a sweet potato that I bought and combine two recipes into one and use whole wheat flour which at this point it’s just a healthier muffin – #PaleoFail. The sweet potato muffin recipe would have cost around $30 by the time I tracked down all the special ingredients… no thanks.  
Ok -here is goes…

  • 1 1/2 cups whole wheat flour
  • 3/4 cup mashed sweet potato
  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of sea salt
  • 2 tsp warm sunflower butter
  • 1/2 tsp ground ginger
  •  1/2 tsp nutmeg
  • 1/4cup honey

Preheat over to 350*. Combine all ingredients in a bowl and mix well.  Spoon mixture into cupcake pans and bake 18-20 minutes.  
Now, these came out dense and not very sweet. I think if I do this again, I will use less wheat flour. I think it was too drying. However, I do think they are good warmed up with a little butter on top!

  1. Wheat flour definitely makes things super dense! Made some very concrete like pancakes with that the other day, lol! Some places have bulk alternative flours, also Bob's Red Mill makes a variety of alternative flour. I try to always have some on hand, so if I see it and know I'm maybe half way through my supply I just pick some up 🙂

    This sounds like a good recipe! I'm sure future experiments will yield delectable treats!

  2. Now that you mention it, our farmer's market has a bulk foods store. I should go there and see what they have. We also have an organic bulk grains and creamery ( best ice cream ever!!). That place is off the beaten path so I forget about them too… I know what I am doing this weekend! Thanks for the reminder!
